Aged for more than 18 months in French Oak red wine barrels, the Flanders was one of our first sour projects. It was made so early that 42 Below had not been built (or even conceived) yet, so it spent its time in the brewhouse as it aged. Brilliant flavors of tart ripe cherry, red wine and balsamic mellow into a soft oak finish. The house blend of brettanomyces yeast, pediococcus and lactobacillus bacteria provide balanced sourness, but this brew finishes relatively dry.
